Meat biryani with sweet potatoes |
The ingredients ✅
For decoration:
Raisins: a quarter cup (red)
Green coriander: half a cup (chopped)
Mint: 1/4 cup (fresh and chopped)
Basmati rice: three cups
Saffron: half a teaspoon
Oil: as needed (for frying)
Sweet potato: 1 piece (large size / cut into cubes)
Onion: 1 grain (large size / cut into 4 pieces)
Lamb meat: 1 kilo
Cinnamon: Oud
Cloves: five grains

Salt: 2 teaspoons
Ghee: 4 tablespoons
Onion: 1 grain (large size / cut into wings, and fried)
Hot pepper: 1 piece (chopped)
Garlic: 4 cloves (mashed)
Mixed spices: one teaspoon
Yogurt: a cup
How to prepare ✅
Wash the rice, drain it, and soak it in water for 25 minutes.
Saffron is dissolved in water.
Sweet potato cubes are fried in hot oil, until they acquire a golden color.
Add the lamb chops to a pot, to be immersed in hot water, with the chopped onion pieces, and the correct spices (cinnamon, cloves, cardamom, and salt). Cook the meat, over medium heat, until fully cooked. Then, the meat is filtered from the broth (while reserving the broth), and left aside.
Add 4 cups of meat broth to a pot on the stove, and put the rice after it has been filtered. Cook the rice for ten minutes, then drain.
Heat the ghee in a saucepan, add chopped onions, hot peppers, crushed garlic, mixed spices, half a cup of meat, and yogurt. Stir the aforementioned ingredients well, then arrange to form a layer, topped with a layer of rice, then another layer of the remaining amount of meat, then an additional layer of rice, and then a layer of fried sweet potato cubes.
Garnish the pot with raisins. The water mixture is poured with saffron. Cover the pot, and cook for thirty minutes. Add coriander and mint, before serving.
